METHOD

10 oz plain flour
2 large eggs
4oz caster sugar
½ pt milk
4oz butter or margarine
½ tsp vanilla essence
50g flavourings e.g. fresh fruit
such as blueberries dried fruit,
coconut, choc chips etc.1 tbsp
cocoa powder for chocolate
muffins.
12 muffin cases, container to carry
home, apron.
• Put all dry ingredients except

sugar into a large bowl. Add extra
flavourings such as chocolate or
fruit.
Put milk, sugar, vanilla essence
and eggs into a jug. Beat.
Place margarine in another jug.
Melt briefly in a microwave.
Add melted margarine. Stir.
Quickly combine all ingredients in
the bowl.
Divide between 6 muffin cases.
Bake in a hot oven (electric 200
degrees, gas 6) till well risen,
golden brown, and they bounce
back when touched
