TRADITIONAL AFGHAN YUM YUM By:Austin Eide Joel Perez….and Brett Ford ORIGIN Traditional Afghan cuisine did not originate from Afghanistan itself. Instead, the food is inspired from the three major ethnic groups living in Afghanistan. The ethnic groups are the Pashtun’s, Tajik’s, and Uzbek’s. POPULAR DISHES 1.Kabuli Palaw 3.Qorma 5. Shawarma 7. Afghan Kofta 9. Afghan Naan 2.Lamb Kabobs 4. Mantu 6. Khameerbob 8. Quroot 10. Dam pukht KABULI PALAW Kabuli Palaw is the most popular Afghan dish. It consists of steamed rice, raisins, and carrots, and often served with lamb. Other varieties of Pulao do exist in Afghanistan as well. LAMB KABOBS Kabobs come in all varieties across Afghanistan, but none are more popular than Lamb Kabobs. Kabobs can also come in chicken, ground beef, and ribs. Often served with a side of naan. KORMA The translation of Korma in Arabic to English basically means “cooked meat.” Korma’s roots are tied to countries like India and Pakistan. Now the dish is mostly served in Afghanistan, made with lamb. MANTU Mantu is steamed dumplings fattened with minced onion beef. In Afghanistan, Mantu is often topped with a type of yougurt sauce. Afghan Mantu resembles Asian dumplings. SHAWARMA Shawarma is a Levantine Arab sandwich,very popular in Afghanistan.. Often made with shaved lamb, goat, or chicken. The meat in Shawarma can often be grilled up for a day on a “spit.” KHAMEERBOB Khameerbob is a incredibly popular, nartive Afghan dish. Only to be prepared for special occasions at home. Khameerbob is very often eaten in the form of a dumpling. AFGHAN KOFTA Kofta is served is almost every middle eastern country, but mostly in Afghanistan. Kofta is a meatloaf or meatball type dish. In the simplest of forms, they consist of ground meat. QUROOT Quroot is a traditional Afghan yogurt like cheese. Quroot is seen as a low calorie dish in its country of origin. Afghan’s believe Quroot is healthier than most foods due to it being sun dried, and yogurt based. AFGHAN NAAN Afghan Naan is a traditonal middle eastern bread. The bread is baked in a Tandoor. Naan is not cut into slices, but mostly torn up, and dipped into any food. DAM PUKHT Dam pukht is not a food, however it is a Afghan cooking technique. This method is associated with the Awadh region of India and even more in Afghanistan. This method is cooking meats and vegetables over a low flame, usually in sealed containers.
